Creamy Chicken & Wild Rice Soup

If you have been following along my monthly meal plan for September 2015, this is a quick and easy recipe to make in the middle of your busy work or school week. The hearty flavors meld together into a warm bowl of comfort. This is one of my favorite soups to make on a cool, fall day.

Prep time:  10 mins

Cook time:  10 min

Total time:  20 mins
Serves: 4-6
  • 3 Cups Chicken Broth
  • 2 Cups Cooked Chicken, cubed
  • 1 pkg of long grain & wild rice (I use Uncle Ben’s Ready Rice)
  • 1 Tablespoon Butter
  • 2-3 Ribs of Celery, diced
  • 1 Cup of Carrots, diced
  • 1 Cup of onion, diced
  • 1/4 Cup Heavy Cream


  • In a soup pot, bring Chicken broth to a boil
  • In a large sauce pan, sautee celery, carrots, and onion in the butter. (about 4-5 minutes until tender)
  •  While the veggies are cooking, cook rice according to directions
  • Add veggies, chicken, rice into the pot of chicken broth and turn down to a simmer.
  • Add heavy cream

Suggested Meal: Serve soup with grilled cheese sandwiches
