pack a punch and will be sure to satisfy your hunger!
2 Cups hot, cooked Rice
1 can black beans, rinsed and drained
2-3 roma tomatoes, diced
1 1/2 cups corn (I used frozen corn, thawed)
1 heart of romaine lettuce, chopped
1/4 cup onion, diced
1/4 cup bell pepper, diced
Optional Toppings: Cilantro, Guacamole. Shredded Cheese
Ingredients for Cream Sauce
1 Cup Sour Cream
1 Cup Salsa
1 Tablespoon Garlic Powder
1 Tablespoon Adobo seasoning
1/2 teaspoon Cumin
Combine all ingredients in a mixing bowl and stir until well blended
Begin layering your bowl: start with rice, then black beans, and vegetables.
Drizzle the creamy sauce on top and enjoy.
