Cheesey Noodles and Sausage

If you are in a rush and need a quick and easy dinner, this recipe is my top pick. You can even use the microwave to shorten the time. Every time I make this dish, my kids ask for seconds and thirds! This is also a great recipe to use if you have leftover holiday ham.

Serves: 4
  • Egg Noodles-16oz
  • 1 Cup Zucchini, diced
  • ½ Cup Onion, diced
  • 2 Cups Turkey Sausage, cubed
  • 1 Tablespoon Fajita Seasoning
  • ½ Teaspoon Paprika
  • Red Pepper Flakes (optional)


  • 2 Tablespoons of butter
  • 2 Tablespoons of flour
  • 1 Teaspoon Fajita Seasoning
  • 3/4 Cup of Milk
  • 2 Cups Monterrey Jack Cheese, shredded


Stove Top

  • Bring water in a pot to boil and cook egg noodles as directed. Drain and put noodles back into pot.
  • Sautee veggies and sausage for about 7 minutes, or until tender. Pour veggies and sausage on top of noodles

Cheese Sauce

  •  Put butter in a large glass dish and microwave for about 30 seconds(I use a 2 cup glass measuring cup)
  •  Add flour, seasoning and whisk into melted butter
  • slowly add milk on top of butter mixture and whisk together until blended
  • microwave for another minute
  •  stir milk mixture to blend a little more. Stir in the cheese and microwave for another 2 minutes
  • stir cheese sauce and pour on top of noodles and veggies
  • Toss noodles with cheese sauce and serve. Add red pepper flakes/or Tabasco for a spicier dish.

Easy French Dip Sandwiches

Prep time:  20 mins

Cook time:  5 mins

Total time:  25 mins
Serves: 4
  • 1 Medium Onion Thinly Sliced
  • 1 Green Bell Pepper Thinly Sliced
  • 1 Cup of Water
  • 2 Beef Bullion Cubes
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 8 oz Thinly Sliced Roast Beef lunch meat
  • 4 slices Provolone Cheese
  • 4 Hoagie Buns, cut a slit in the center


  •  Heat oven to 500°F. Heat 12-inch skillet over high heat and spray with cooking spray.  Sautee onion and bell pepper in skillet. Cook 11 to 12 minutes, stirring frequently until onion is golden brown.
  •  Meanwhile, in 2-quart saucepan, heat water to boiling and add beef bullion cubes. Stir until dissolved. 
  • Add roast beef to the skillet along with herbs. Sautee for 2 minutes stirring frequently. Add 1/4 cup of the beef broth and cook until bubbly. Remove from Heat.
  •  Place buns, cut sides up, on ungreased cookie sheet. Bake 3 minutes or until lightly toasted.
  •  Place beef, onion, bell pepper inside the slits of the buns. Top with Cheese; toast for another 2 minutes until cheese melts. Serve with warm broth for dipping.
